South Beach Diet Book ( Orange Roughy in Scallion and Ginger Sauce

DH and I are in Phase 1 of the SBD, but this diet is great for any LC WOE. This fish comes out tasty and unbelievably moist. DH and I are not fish eater, but this will be a regular in our house now. Goes great with Snow Peas and a green salad.
1/3 cup cooking sherry
3 TBS low-sodium soy sauce (we use regular)
2 tsp. sesame oil
1/4 cup of finely diced green onion
1 tsp. grated ginger
1 tsp. finely diced garlic
1lb of orange roughy (can also use Cod, Sole, or Flounder)
How To Prepare:
Preheat oven to 400 degrees. Mix the sherry, soy sauce, sesame oil, onion, ginger, and garlic in a small bowl.
Place fish in an ovenproof/safe casserole dish. Drizzle the marinade over the fish and bake for 12 min. or until the fish flakes easily.
