10 oz. raw large shrimp, peeled and deveined
1 tsp salt
1/4 cup olive oil
1 generous tbsp chopped garlic
1 bay leaf
1 1-inch chile pepper, seeds and ribs removed
1 tbspn parsley, minced
How To Prepare:
Lemon cut into slim wedges for sprinkling over shrimp
Place shrimp in bowl, sprinkle with salt and toss to coat. Let cure for 15-20 minutes. In medium skillet, heat oil over medium heat. Add garlic, bay leaf and pepper and stire for about 1 minute, making sure that the garlic doesn't burn. Add shrimp and stir until shrimp turns pink and is just cooked through, about 3-4 minutes. (Shrimp overcooks easily and loses its tenderness) Sprinkle with parsley and serve with lemon wedges.
