Description:
Ingredients:
sugar substitute eqiv to 1/3 c. sugar
2 eggs, separated
3 tablespoons brewed espresso (or strong instant coffee), warm
2 tablespoons Grand Marnier or other liquor
4 ounces best quality LC dark chocolate, melted
1 cup heavy cream
How To Prepare:
In a large bowl, whisk the sugar substitute (I use sucralose, aka liquid splenda) and egg yolks together for a few minutes by hand, then whisk in the coffee, liquor, and melted chocolate. Set aside.
In an extremely clean food processor with the egg-white-beating paddle, whip the egg whites to soft peaks. Gently fold into chocolate mixture, half at a time, using the whisk.
Rinse out the food processor and dry it. In it, beat the heavy cream to stiff peaks. Fold into chocolate mixture, half at a time, using the whisk. Divide into portions and chill in the fridge for as long as you can stand it. Share with LC dieters, they will fall to the ground at your feet.
---
It works out to about 24 carbs for the whole recipe or 6 nice-sized portions at 4 grams each. Aaaand, if your priorities are different than mine, you can cut out the liquor for some serious carb savings. Not me though. Sometimes I switch it up to 2 T coffee, 3 T liquor. I like me some liquor.
