Description: This is a yummy dip ... filling for celery ... sandwich filling. Low in carbs, easy to prepare and mighty good. Use with pork rinds too! Good dippin'!
Ingredients: 8 oz. room temperature cream cheese
4 pieces of bacon, diced and fried til crisp
1/4 Green Bell Pepper, or Jalapino if you want some heat!
1/4 Seeded finely diced tomato
scant 1/4 tsp. Seasoned Salt
Slight teaspoon of heavy cream (if needed for spreading consistancy)
A few shakes/grinds of Black Pepper
One or two shakes of onion powder
How To Prepare: Dice bacon, cook until very done and crisp, drain on paper towel, reserve.
Cut a medium sized tomato into quarters, using one quarter, squeeze out the seeds, place this tomato on a few paper towels and press out excess juices and moisture, the extra juice will make your dip too thin. Dice this quarter of tomato very fine, reserve.
Cut a medium sized Green Pepper into quarters and using one quarter, dice fine, place between paper towels and press out juices until dry, reserve.
In a medium sized mixer bowl, beat the cream cheese until fluffy, add the seasoning salt, onion powder and pepper, and mix in well. (Be careful using the seasoning salt, too much will make your dip pink) Add the bacon and green pepper and beat in, add the dry diced tomato and stir to combine. At this point you can add a little heavy cream to get a good spreading consistancy. Store in refrigerator.
Number of Servings: Depends on the size of the scooper.
Carbs per serving - include all nutritional information if known: 2-4oz servings, each under 10 carb probably 5 net carbs. Similar recipes say "Total carbs per 2 tbsp. serving: 2 grams digestable carbs when doing Atkins, protein 1.5, fat 8.5 grams," calories aprox. 90.
