3 T butter
1 pound mushrooms, thinly sliced
2 cups broccoli florets (or whatever you have, i used 1 cup broccoli and 1 cup zucc)
2 T olive oil
6 oz cheese, grated (you can omit this, i used 2 oz)
salt and pepper
8 large eggs
How To Prepare:
preheat oven to 350*. grease a muffin tin, standard size (10 muffins). saute mushrooms in butter until browned and crusty around the edges about 15 min. put them in a food processor and mince (or chop by hand if you don't have a fp). while the mushrooms are browning, steam your veggies until tender about 7 minutes. take your steamed veggies and place in a mixing bowl. add olive oil and mash lighlty with a fork until chunky. add mushrooms and cheese, if youre using.mix well. fill each muffin tin half full with veggie mixture.
in a separate bowl beat the eggs with a splash of water until light and fluffy. season w/salt & pepper. pour egg batter over the veggies until 3/4 full. bake for15 minutes.
it sounds like a lot of work but it's not. then you can have breakfast for 5 days! or a snack, i top with salsa.
