Description:
Ingredients:


I didnt make any type of crust.
If you like I suppose you could find something LC to make as a crust. Maybe some crushed LC cookies or crackers or something.....


Anyhow, here is the recipie.


3/4 c splenda (the kind you measure by the spoonful)
1 1/2 tsp pumkin pie spice
1 tsp cinnamon
1/2 tsp salt
1 15 oz can pumkin (NOT pumkin pie FILLING, plain pumkin)
1 1/4 c evaporated milk or half and half
2 eggs


mix all ingrediants together on low speed until well blended


Oven should be preheated to 425.
Bake 15 minutes
Reduce temperature to 350
Bake 40-50 minutes or until knife inserted in center comes out clean.


Cool 2 hours


keep refridgerated after cooled.


There are approx 5 net carbs per serving, approx 6-7 servings.


I am also going to buy some heavy whipping cream and make homeade whip cream to top it off, or if you really wanna treat yourself, imagine this with a cold scoop of LC vanilla ice cream.


You gotta try it, its good!

Cons: Not so low carb as you think

This is great but I don't know how you get 5 g of carbs per serving unless you are eating 1/12th of the pie as a serving. Condensed milk has 1g of carbs per TBSP. For a cup and a quarter that's 45g in the milk alone, you add the other 15 for the pumpkin for a grand total of 60g. Not to complain, I have a solution. I found soy milk at my grocery that has 1g of carbs per 8 oz. Use that and you have 1.5g for the milk, 15 for the pumpkin, for a total of 16.5g in the whole pie. And it tastes FABULOUS! Hope this helps.
