4 mushrooms (reserve stems)
1/8 cup onion
1 Tbls butter
.5 cup diced chourico (spicy portuguese sausage)
.5 tbl oil
1/4 cup ground porkrinds
1/2 oz mozarella or jack shredded cheese
How To Prepare:
Sautee onions and stems of mushrooms (chopped) in butter and oil.
Add chourico to pan and continue to cook over medium heat. Add ground porkrinds and oil, mix well to create breading. Stuff mushrooms with chourico mixture. Top with shredded cheese. Place in 375 degree oven (toaster oven works great) for aprox. 15 minutes or until mushrooms are tender and cheese is melted.
