Description: This is a super easy soup, and it tastes much better than you think it will!
Ingredients: 1 medium onion
1 head fresh cauliflower
olive oil
salt
pepper
How To Prepare: Coat bottom heavy pan with olive oil.


Add one medium sliced onion and cook on medium-low (covered) for 18 minutes. The goal is to make the onions translucent but not to carmelize.


Add one cauliflower head (just cut off the green bit and leave the head whole), along with one cup of boiling water and salt. Cook covered for 20 minutes.


Add 5 cups of boiling water and cook (covered) for an additional 25 minutes. Raise heat slightly to medium.


Puree either with a stick blender or in portions in a blender. Soup will thicken. Add salt and pepper to taste.


To reheat, just add some water and microwave. It’s good garnished with pepper jack cheese or just a little pepper!
