Lay chicken flat and cover with 3 strips of bacon.
At the thickest end, put 1/4 of the spinach. Sprinkle with garlic powder (salt and pepper to taste) and 2 Tbsp cheddar cheese.
Roll chicken and secure closed with toothpicks (2 per breast)
Place in baking dish (may add 1 tbsp oil to bottom if needed).
Cover each breast with 1 Tbsp ranch dressing and sprinkle with parm cheese.
Bake uncovered at 350 for 35-45 minutes, until chicken is no longer pink and top is golden brown.
Remove toothpicks (remember that there are two in each!) and serve!
