How To Prepare:
Preheat oven to 400-degrees.
Heat italian dressing in large pan.
When warm, brown chicken breasts in dressing.
Remove chicken and place in oven-proof dish.
Add vinegar and herbs to dressing (may need to add a shot of olive oil if not much dressing left).
Add onions and mushrooms, cook until tender-crisp.
Pour all sauce over chicken breasts.
Bake for 20 minutes.
Place one slice of cheese on each breast and return to oven until cheese is melted (I usually broil at this point to get it a little golden).
