my husband, who is not a veggie eater (usually) even likes this.
3-4 small to medium zucchini, sliced
5 strips of bacon
1-2 green onions
1 pound of fresh mushrooms, sliced
4 ounces of shredded cheese
1 or more cloves of garlic (I use a tsp. of chopped from the jar)
How To Prepare:
Fry bacon in a skillet until browned, remove from skillet. You may drain the grease and add olive oil instead but we use the bacon grease. Add the zucchini, onion, mushroom, and garlic. Saute until they are soft but not mushy. Add the crumbled bacon and sprinkle the top with the cheese. Cover with a lid long enough to melt the cheese and serve.
