I was craving something hot for breakfast, made with eggs. I was out of raw eggs but had hardboiled ones on hand. This is what I came up with. It's easy...
2 slices Canadian bacon
1 slice American cheese (0 carb)
2 oz. cream cheese
single serving Corningware dish or equivalent
How To Prepare:
Slice two thin pats of butter and put in bottom of dish. Put Canadian Bacon on top of butter. Next, slice up your eggs right over the bacon. Place cream cheese on top of eggs. Doesn't matter if it's a slab or dotted all over them. Sprinkle with a little pepper. Top with one slice of American cheese (or the equivalent in cheddar).
Microwave on high until cheeses are bubbly. Enjoy!
