My own experimentation Delectible Cheesecake Mousse

I first tweaked a recipe like this I used when working in an assisted living facility and cooking for 21 diabetics ... I used splenda in this recipe and man, they loved it, and I might add, me! I have made a few changes and adjustments and cut this recipe down in size from serving 36 to serving 8.
In a large mixing bowl, on high speed of mixer, whip the cream cheese until it is light and fluffy. Add the vanilla and beat it in. Add the splenda and mix it in a few turns.
Pour in the whipping cream and beat all until it is light an fluffy, do not over beat you may get butter. I don't know that this would happen I never beat it that much ha!
Cover and put in refrigerator until set.
Serving size is 1/2 cup. I added instant coffee powder to this once (1/4 cup in the cream) it was great!
