If you love the chicken marsala at the Olive Garden ... this recipe will make you happy to never have to pay the overpriced bill for this dish again! Very low carb and delicious enough for company. Make sure you use good quality marsala wine... if it isn't good enough to drink -it isn't good enough to cook with - avoid sweet wines as they have higher carb counts.
4 Chicken half breasts - boneless, skinless
parmesan cheese (about .25 oz)
1/2 tsp. Salt
1/2 tsp. Oregano
4 Tbsp. Oil
4 Tbsp. Butter
1/2 tsp. Pepper
1 C. Fresh Mushrooms, sliced
1/2 C. Marsala Wine (NOT ANY OTHER KIND - MUST BE MARSALA)
* 3 T sour cream (optional)
How To Prepare:
Combine crushed parmesan, salt, pepper, and oregano and blend well. Heat the oil and butter in a skillet until bubbling lightly. Dredge the chicken in the pork rinds and shake off the excess. Cook the chicken on medium heat for about 2 minutes on the first side, until lightly brown. As you turn the beasts to the second side to cook, add the mushrooms around the chicken pieces. Cook about 2 more minutes, until lightly browned on the second side. Stir the mushrooms. When the second side is lightly browned, add the wine around the pieces, cover the pan and simmer for about 10 minutes. *optional*-- remove chicken and whisk in sour cream. heat until bubbly. Makes a more creamy sauce.

directions need tweaking
This was actually very good, I added a bit more salt to it after it had cooked. As far as the directions go, you should pound the breasts until they are flattened and a uniform size, otherwise they will not cook in two minutes on each side. Also after simmering, I reduced the sauce a bit to give it more flavor and thicken up. Overall though, it was a very good dish.
