Spicy one dish meal with chicken, sausage, and shrimp. My hubby's favorite!!!
1 pkg bonelss skinless thighs (approx. 6 thighs)
1 pkg eckridge sausage
2 packages cooked large cocktail shrimp
6 sm to med zucchini squash
1 med onion
3 gloves garlic
1 bell pepper
1 jalapeno pepper
1 lg can rotel tomatoes
16 oz mushrooms
How To Prepare:
Mince garlic and jalepeno pepper. Cut up onion ( not too small of pieces). Slice the bell pepper. Slice the mushrooms.Cut up chicken and sausage into bite sized peices. Put all these ingredients into a covered skillet and saute' until the chicken is done (approx 20 min.). Chop the zucchini and add to skillet. Add rotel tomatoes. Simmer for 15 min. While simmering, defrost the shrimp in the microwave for approx. 2 min., remove the fins if desired. After simmering for 15 min. add the shrimp and simmer for 10 more minites to warm up the shrimp. Serve hot in a bowl like a stew or soup.
