6 Large Tomatos
1/2 Lb. Bacon
Small chopped onion
1 cup low carb bread crumbs (make your own from low carb toasted bread)
Shredded cheddar cheese
How To Prepare:
Chop bacon into small pieces
Brown onions and bacon in a sauce pan
Cut top off tomatos and remove pulp (save skins)-add to sauce pan with bacon and onion - cook about a two minutes
Add bread crumbs and mix
Use mixture to stuff tomatos and put in cassarole dish
Top with cheddar cheese and bake at 350 degrees for 20-25 minutes until cheese is bubbly
