Description: Easy eggg casserole with no cream. It freezes well and microwaves from frozen well.
Ingredients: Eggs (12+ for a 13X9 pan; 9+ for a 8x8 or 9x9 pan)
Any meat (I fry 1 pound sausage for the 13x9 and 1/2 pound for the smaller pan. I bake the bacon in a 350F oven until done, crumble bacon.)
Cheese (enough to cover the top)
Any vegetable (I used spinach, mushroom, onions, whatever sounds good to you - broccoli or cauliflower)

I use a glass casserole dish for this. I'm not sure how a metal pan will do. You can find glass casseroles at most thrift stores.
How To Prepare: Spray the pan with a non stick spray.
Line the botton of the pan with the meat. I put the sausage on the bottom, then the crumpled bacon on next.
If you are adding veggies then add them next.
Break the eggs in a bowl and mix well.
Pour eggs over the mixture in the pan.
Bake in a 350F for about 20-25 mins or until a knife stuck in it come out clean.

This freezes very well. I cut it into slices, pack one per a ziploc sanwich bag, then put all the bags in a large ziploc freezer bag.

Microwave frozen for about 2 mins or 1 min thawed.
Number of Servings: Depends on how big the slices are, I get 6-8 out of the large pan and 4-6 out of the smaller one.
