Description: This is a great pasta salad for company. It looks nice and tastes great. No one will ever guess that it is low-carb.

Ingredients: 1 (16 ounce) package Dreamfield's elbows
5 hard-boiled eggs, chopped
1/2 cup canned diced tomatoes (w/chiles optional)
1/2 cup chopped dill pickles
1/2 cup chopped white onion
1/2 cup chopped green bell pepper
3/4 cup chopped celery
3/4 of a 6 ounce can pitted black olives(sliced)
3/4 cup shredded mild cheddar or american cheese
2 tablespoons cider vinegar
1 1/2 cup mayonnaise
1 tablespoon splenda
salt to taste
ground black pepper to taste
How To Prepare: 1 Cook macaroni in a large pot of boiling water until tender. Drain.
2 Blend the vinegar and mayonnaise thoroughly.
3 Combine macaroni, onions, tomatoes, pickles, bell peppers, cheese, olives, celery, eggs & Splenda in a large bowl.
4 Blend in the mayonnaise mixture. Season with salt and pepper to taste.
5 Chill in the refrigerator until ready to serve.
