Description: Originally this recipe called for a few no-no high carb ingriedients so I tried a little substitution and it is now low carb and very good!
Ingredients: 1 1/4 lbs of summer squash, cubed
4 eggs
1/2 cup of heavy creme
1 lb of jack cheese, cubed
1 tsp of salt
1 tsp white pepper
1 tsp nutmeg
2 tsp of baking powder
3 tbsp of soy flour
1/4 cup of chopped parsley
1/2 tsp of herbs
1/2 stick of butter
3/4 cup of pork rinds, crushed (optional)
How To Prepare: Cook squash in salted water until tender. Drain and cool. Mix eggs, heavy creme and remaining ingredients except for pork rinds and butter. Spread into greased oblong baking dish. Sprinkle pork rinds on top and dot with butter. Bake at 350 for 30 minutes.
