Description:

This is a knock off version of eggplant parmesian. It tastes just as good if not better!
VERY LOW CARB

Ingredients:
|
3 medium zucchini squash (sliced length wise)
2 cups tomatoe or spagetti sauce (low carb)
mozzarella cheese or moterey jack cheese
3/4 cup mini-carb baking mix
1/2 cup olive oil (for frying)
fresh basil (to taste)
1 tsp minced garlic
salt & pepper (to taste)

How To Prepare:

Heat tomatoe sauce on medium heat, add minced garlic, chopped fresh basil and a little salt.
Heat olive oil until hot on medium high.
Dust the zucchini that you cut length wise (like a lasagna noodle) with baking mix. Cook zucchini in hot olive oil for about 3 minutes per side. Until crisp and brown.**(If the baking mix dosen't want to stick to the zucchini,wet the zucchini and then dust it with baking mix)
Now, in a long baking dish,start with a layer of sauce in the bottom.Then layer the fried zucchinis on top of the sauce. Add more sauce, and smother with cheese!!
You can have as many layers as you want!
Bake in a 400 degree oven for about 25 to 30 minutes.
This stuff is GOOOOOD EATIN'!!!
