Haven't worked out the carbs on this but pretty low! Sorry.
couple of tbsp. olive oil
1 Medium Eggplant
1 Cup Asiago or another hard cheese
1 cup real mayonnaise
a few finely chopped/slice basil leaves
How To Prepare:
Grilled Eggplant with asiago cheese souffle.
Slice off top and bottom of eggplant and discard. Slice eggplant into 1/2 inch slices (salt and sweat on papertowels as you would with any eggplant).
Brush each slice with olive oil and garlic. Grill just enough to put nice carmelized marks on each side.
Mix 1 cup of shredded or grated asiago cheese, 2 finely slice green onions, and almost a cup of real mayonnaise. Make a nice cheese mixture that is thick.
Arrange slices of eggplant in a baking dish and mound spoonfuls of the cheese mixture on top of each slice. Bake at 425 until cheese mixture is brown and bubbly (about 15 min). Serve with a fine mince (or chiffonade ) of fresh basil.
It keeps well in the fridge and gives me a gourmet side-dish for days!
