Description: Made this up when I was babysitting the grandkids and had little in the fridge except a pound of ground beef. Could also be used for boneless chicken breasts.
Ingredients: >1-2 lbs ground beef
>1 can tomatoes with green chiles (I used Muir Glen Organic Fire Roasted Diced Tomatoes with Green Chiles, yum!)
>1/4 cup diced onion
>shredded cheddar/monteray jack cheese
>shredded lettuce
>sour cream or guacamole (optional)
How To Prepare: Form ground beef into patties and brown on both sides. Add diced onion and can of tomatoes. Season with salt, pepper, or garlic powder, if desired. Simmer until beef patties are cooked through. Turn off heat and sprinkle cheese on top of patties. Serve covered with shredded lettuce and a dollup of sour cream or guacamole (optional).
Number of Servings: 3-6, depends on amount of ground beef
Carbs per serving - include all nutritional information if known: Muir Glen FR tomatoes w/chiles - 1/2 cup has 6 g w/1g fiber, no sugar added
