1 lb. bulk Italian sausage
5 large eggs
1/2 cup medium yellow onion, chopped fine
1/2 cup red bell pepper, chopped
1/2 cup yellow or zucchini squash, chopped
8 oz. shredded mozzarella cheese
1 tsp. garlic powder
1 tsp. oregano
salt & pepper to taste
dash cayenne pepper
How To Prepare:
In a medium skillet, brown sausage with chopped onion, drain fat.
In a large bowl, beat eggs. Add onion, bell pepper, squash, cheese and spices - blend well. Stir in cooked sausage and onion.
Spray a 9-inch pie plate with non-stick spray. Spread mixture in pie plate and bake for 30 minutes at 350, or until eggs are cooked and slightly browned on top.
