This is my contribution when asked to bring something for a breakfast/brunch buffet.

Ingredients:
|
8 Eggs (3.08 grams carb)
2 1/2 C Heavy Cream (16.63 grams carb)
1 lb mild Italian Sausage (10 grams carb)
12 Oz Grated Cheese (provolone = 7.28 grams carb; Fontina = 5.27 grams carb --- I used a 12-oz package of Trader Joe's Quattro Formaggio and counted it as 7 grams)

How To Prepare:

Preheat oven to 350~. Spray or butter a 9x13 pyrex casserole dish.
I used large link sausage, which I removed from the casings and cooked over medium heat, separating into small pieces as it cooked, until nicely browned. Drain and place sausage in the bottom of the buttered casserole dish.
Sprinkle grated cheese evenly over the sausage.
Beat heavy cream and eggs together until well-blended. Pour over sausage and cheese.
Bake for 45 minutes to one hour. Quiche should be set and golden brown on the top.
Cool slightly, cut into 12 or 16 pieces.
Notes: I bake this the night before, refrigerate overnight, and then warm in a ~225 oven for 45-minutes to an hour before serving.
Leftovers can be individually wrapped in plastic and frozen, and later microwaved one slice at a time.
