Description: This is very easy to make. I used to make it all the time pre-LC with potaotes but the radish substitute is wonderful and they aren't bitter after cooking.
Ingredients: 1# bacon
1# bag radishes (chopped)
1c. chopped onion
12 eggs, beaten
How To Prepare: Fry the bacon in a large pan (I use a chicken fryer) until crisp. Remove bacon and crumble, set aside. Drain all but 3T. bacon grease from pan and add the onion and radishes. Cook on medium until radishes are tender, about 10 minutes. Add the eggs and continue to cook until eggs are done! Add salt and pepper to taste.

Carbs per serving - include all nutritional information if known: 283 calories 21g fat 4.2g carbs .7g fiber 19.3g protein
