Ingredients: 2 packets chopped ham (usually near the bacon)
3/4 head of cauliflower, center removed- you only want the florette parts.
1/4 tsp. white pepper
1 tsp. onion powder
4 tbsp butter
2 tbsp heavy cream
1/4 cup lite ranch dressing (watch your carbs)
1/2 brick cream cheese, softened
1 cup crushed pork rinds
1/2 cup shredded sharp cheddar
How To Prepare: Steam cauliflower until it is fall apart tender.
Pan fry ham with onion and 1/2 the butter.
Melt the remaining butter.
Fork apart cauliflower into very small pieces.
Now mix cauliflower, cream, melted butter and cream cheese in large mixing bowl, by hand.
Add ham and all the juices from the pan, Mixing in well.
Stir in 2/3 of the pork rinds, the dressing and white pepper.
Transfer mixture to casserole baking dish.
Sprinkle cheese and the remaining pork rinds and bake for 20 minutes at 350F.
