a Carb Option pull out recipe card in a magazine Stuffed Chicken Breast in Alfredo Sauce

4 boneless skinless chicken breast halves (about 1 lb) pounded to about a 1/4 in thick
1 cup shredded part-skim mozzarella cheese
4 slices of bacon, crisp-cooked and crumbled
1 egg, slightly beaten
1/3 cup italian bread crumbs
2 Tbsp bertolli classico olive oil
2 cups carb option alfredo sauce
1/4 cup chicken broth
How To Prepare:
evenly top each chicken breast w/ cheese and bacon. roll up and secure w/ wooden toothpicks. dip chicken in egg, then bread crumbs.
in 12-inch nonstick skillet, heat olive oil over medium-high heat and brown chicken, turning occasionally. stir in carb options alfredo sauce and broth. bring to a boil over high heat. reduce heat to low and simmer, covered, 10 min. or until chicken is thoroughly cooked.

** note, i used 3/4 cup of chicken broth to make a little extra sauce to go over some egg noodle for my family (i am the only one doing atkins in my house hold).
