1 lb. cod fish fillets or other favorite fish
2 tbsp. water
3/4 cup bread crumbs (I make my own with left over ends of low carb bread. I dry them out in a low temp oven and crush them in my food processor.)
1 tsp. cajun seasoning
How To Prepare:
Preheat oven to 300 degrees.
-Cut fillets in serving size pieces if large.
-Combine egg and water in shallow dish.
-Combine bread crumbs and seasoning in another dish.
-In a large skillet, pour in about 1/4" oil and heat over medium flame until hot for frying.
-Dip fish in egg, then in crumb mixture. Add half of fish in single layer. Fry fish on one side until golden, turn carefully. Fry till golden and fish flakes easily with fork. It takes about 10 minutes total to fry. Drain on paper towels and keep warm in oven while frying remaining fish.
-Fish is crispy and delicious!!
