Great comfort food on a Sunday afternoon. Requires some time, but well worth the effort.
1 lb. chuck or round steak cut into bite-size pcs.
1 tbs. Hungarian paprika
1 large onion, chopped
2 stalks celery, chopped
1 Hungarian banana pepper, diced
4-5 fresh mushrooms, sliced
1 tbs. butter
1 can tomato sauce
4 cups water
2 tsp. instant beef boullion
2 bay leaves
2 tbs. Atkins bake mix
1 cup sour cream
Salt & pepper to taste
How To Prepare:
Sprinkle steak with half of the paprika. Saute vegetables in a large dutch over in butter until soft. Remove from pot and add meat. Continue to saute until steak is very well-browned. Return vegies to pot and add tomato sauce, water, boullion and seasonings. Simmer for 2 hours. Whisk bake mix with a small amount of water and gently pour into goulash. Allow to simmer for an additional 10 minutes. Remove pot from burner, take out bay leaves and stir in sour cream. Heat to just boiling and serve.
