Smokey bacon and tangy sharp cheddar gives this chicken salad a little kick! This is great on a bed of crisp lettuce and spritzed with fresh lemon juice.
2 chicken boneless chicken breasts, cooked
1/2 dill pickles slices
1/4 cup minced onion
6 sliced crisply cooked bacon
1 celery stalk
1 cup shredded sharp cheddar
1/2-3/4 cup sugar free mayo or to taste
salt/pepper to taste
How To Prepare:
Place cooked chicken in food processor. Pulse until shredded well but not mush. Dump into mixing bowl.
Place dill pickles in processor, add 1 pack splenda and process until relish consistency. Dump into mixing bowl.
Process onions until minced, then add to bowl.
Celery may be diced by hand or minced in processor then add to bowl.
Added shredded cheese to bowl and stir to blend ingredients. Add mayo and stir until well blended. Add salt & pepper to taste and chill.
I place this on a bed of lettuce and then take a slice of fresh lemon and drizzle the juice over all. It\\\'s awesome and so refreshing!
I had to put it away to keep from eating the whole bowl!
