I apologize about the amounts. i never measure anything, so these are my best estimates. you have to taste it and add things as you wish. This makes a huge pot, I freeze it in smaller containers. You might want to make a smaller amount to make sure you like it.

Ingredients:
|
4-5 tbsp bacon grease
1 medium onion, chopped
3 cloves garlic, minced
Big 1/2 gallon can hunts tomato sauce
3 12 oz cans hunts tomato paste
liquid splenda, equiv to 1 cup sugar
1/4 cup sugarNOT or other brown sugar substitute (atkins maple syrup looks good)
liquid smoke, about 2-3 tbsp
1/2 cup wine, any kind
2-3 tsp cayenne pepper or 1-2 tbsp tobasco (optional)
xanthan or guar gum (optional)

How To Prepare:

sautee onions in bacon grease until lightly browned. add garlic, stir for about 20 seconds, then add the wine to de-glaze. add tomato sauce and paste, and rest of ingredients, except xanthan. stir well until comes to slow boil. transfer to a crock pot, and cook all day/night on low, about 8-24 hours. the longer the better. stir every couple hours. For the last hour or so, add 2 tsp xanthan or 1 tbsp guar gum, whisk for a few minutes. the xanthan keeps it from separating.
