Brown ground beef in a skillet and prepare the taco seasoning according to the directions. I use 2 lbs of beef per envelope. It cuts the carbs per serving but still has good taco flavor.
While the meat is simmering, put the toppings in bowls. When meat is finished, serve buffet style allowing everyone to add toppings. The picante sauce really adds to this salad.
As an alternative, you can put the meat and toppings on a low carb tortilla for a yummy burrito.
