2 lbs ground beef
1/2 crushed pork rinds
1/4-1/2 cup chopped onion (depending on your preference)
salt and pepper to taste
1 8 oz can tomato sauce
1/4 cup granulated Splenda
1/4 cup white vinegar
How To Prepare:
Mix tomato sauce, Splenda, and vinegar in a saucepan on low heat. Bring to a simmer, and simmer until Splenda is melted. Mix beef, egg, pork rinds, onion, salt, and pepper with your hands until all is thoroughly incorporated. Pour 1/2 of the tomato mixture into the meatloaf, and mix well. Shape into a loaf, and put in a greased baking pan. Top with the rest of the tomato mixture and sprinkle a bit of parsley on top. Bake at 350 degrees, uncovered, for 1 to 1 1/2 hours, basting occasionally.
