1 (19.76 ounce pkg.) Johnsonville Fresh Italian, casing removed, crumbled, cooked and drained
6 large tomatoes, cored, (use cored tomato pieces for recipe)
2 Tbsp. olive oil
1/2 cup onions, caramelized
2 tsp. garlic, minced
1 cup diced tomatoes
1 cup chopped spinach
3T cooking sherry (optional)
Salt and Pepper
How To Prepare:
Place olive oil in pan and cook onions until golden. Add garlic, tomatoes and spinach cook until spinach is wilted. Blend cooking sherry and drained sausage with mixture. Let mixture cool slightly and add egg. Stuff mixture equally into tomato and bake at 350° F for 35- 40 minutes or until heated through.
