*1/2 cup chopped onion
*3 cups broccoli
*3 cups chicken broth
*3/4 cup sour cream
*4 ounces cheddar cheese, shredded
*1 teaspoon thyme
*salt and pepper to taste
*Frank's Red Hot Sauce (optional, to taste)
How To Prepare:
Brown onion in pat of butter until translucent, about 4-5 minutes. Add 2 cups broccoli (chopped) and chicken broth, bring to a boil. Then cover and reduce heat and simmer for 10 minutes.
In the meantime, chop remaining 1 cup of broccoli into small pieces. Steam for 4-5 minutes in microwave.
Transfer 3/4 of mixture to blender or food processor, pulse until pureed and return to pot. Add sour cream and cheese on low heat until melted. Add steamed broccoli pieces. Add in thyme, salt, pepper and hot sauce to taste.
