2 large eggs
1 teaspoon olive oil
2 tablespoons diced green bell pepper
1 each green onion -- sliced
1/2 medium roma tomato -- diced
1/4 teaspoon curry powder -- or to taste
1 each salt and pepper -- to taste
2 tablespoons shredded sharp cheddar cheese
How To Prepare:
Beat eggs with a little salt and pepper and set aside. In a non-stick skillet, heat oil and add the tomatoes, onion and bell pepper. Saute until tomato is soft then add the curry powder, stir around then add the beaten eggs and scramble. Once cooked, sprinkle cheese over top and let it melt.
