Angela Cheesey Bacon Meatloaf Reviews Date of last review 2 Sun February 19, 2006 Recommended By Average Price Average Rating 100% of reviewers None indicated 9.5 Description: Ingredients: 1 1/2 Pounds Lean Ground Beef 4 Strips Bacon 2 Eggs 1/2 Medium Onion -- chopped 1/4 Cup Pork Rinds -- finely crushed 1/2 Cup Cheddar Cheese -- shredded Salt and Pepper to taste How To Prepare: Preheat oven to 400 degrees. Cook the bacon until it is about three quarters done (not yet crispy), then chop it into small pieces. Combine the ground beef, bacon, eggs, onion, pork rinds, and salt and pepper in a large bowl and mix well. Place in loaf pan and bake, uncovered, for 40 minutes. Add the cheddar cheese and bake until melted, about 5 more minutes. Enjoy! Yes | Price you paid?: None indicated | Rating: 10    Positive aspects of the product (pros): Good Basic Recipe Cons: None This is a good basic recipe for meatloaf. I can spare a few carbs, so I added celery,Worcestshire Sauce and cream to the meatloaf mixture, and I also topped it with tomato sauce and cheese. I had not had meatloaf in a long while, and I was very surprised at how yummy it was.

Yes | Price you paid?: None indicated | Rating: 9    Positive aspects of the product (pros): Easy Cons: none I did make a couple changes: I skipped the cheese, I added some Worcestershire sauce, and I sauteed the onions in the bacon grease before adding them to the rest of the mixture. I cooked it until the internal temperature hit 150, pulled it from the oven, and let it rest. I haven't had meatloaf in a long time, so I don't remember how this compares, but it is darn yummy. A slice the next day was nice and hot in 1 minute in the microwave, and somehow even tastier than when it was fresh out of the oven! Nice and moist, too.
