Description:
Ingredients: 2 cups Ricotta Cheese
1/2 cup Parmesan Cheese
1 cup chopped mushrooms
1 cup Chopped spinach
1 cup red onion -- diced
Olive Oil
butter
1 cup heavy cream
How To Prepare: Mix ricotta cheese with
parmesan cheese and fold
in spinach.
In oil saute red onion and
mushrooms until all liquid
has evaporated.
Fold into cheese mixture.
spread mixture onto flank
steak that you have
pounded thin and roll.
Hold together by weaving
bamboo skewers through
like sewing. In saute pan,
add oil and brown steak on
all sides. Then put into 350
degree oven for
about 25 minutes. Remove
from oven.
place meat on platter to
rest. In pan add butter and
cream salt and
pepper. Bring to a boil to
reduce. Place spoonful of
sauce on plate. slice meat
and place on sauce. Top
with parmesan cheese if
desired.
