Description:
Ingredients: 2 Flank Steaks -- 1.5 lbs
each.
Meat Tenderizer
1/4 cup soy sauce
1/4 cup cooking sherry
1/4 cup tarragon vinegar
2/3 cup minced onion
2/3 cup chopped green
pepper
1 Cup chopped
mushrooms -- fresh
1/4 cup chopped parsley
5/8 teaspoon Pepper
1/2 teaspoon Salt
How To Prepare: Sprinkle flank steaks with
water and meat tenderizer.
Prick meat on all
sides with fork. Combine
Soy Sauce, Sherry,
Tarragon Vinegar, and 1/2t
pepper. Pour mixture
over steaks in covered
glass dish. Let marinate in
refrigerator for 2-3
hours, turning every hour if
possible.


Saute onion & green
pepper in butter over
medium heat until tender.
Add
mushrooms, parsley, salt,
and remaining pepper.
Sauté 4-5 minutes more.


Transfer steaks to cutting
board, arranging vegetable
mixture in centers.
Roll up steaks lengthwise,
holding together with
toothpicks or cooking
string. Make 3-4 diagonal
shallow slits in top and
sides of steaks. Brush
steaks with remaining
marinade.


To cook, either grill over hot
coals for 14-20 minutes or
arrange steaks in
broiling pan and broil for
17-24 minutes. Turning
after 7 minutes.
