Jenni Breakfast 'Cupcakes' Reviews Date of last review 4 Tue January 16, 2007 Recommended By Average Price Average Rating 100% of reviewers None indicated 8.3 Description: Ingredients: 1 pound sausage 2 whole eggs 2 egg whites 2 cups half and half 1/4 cup cheddar cheese How To Prepare: Preheat oven to 425. Place large cupcake liners into a jumbo size muffin tin (one that holds 6 jumbo muffins). Fry sausage in a skillet and then rinse under hot water to remove excess grease and set aside. Beat together eggs and half and half. Divide sausage between 6 cupcake liners. Top each with a little cheese then pour egg mixture on top until cups are about 3/4 full. Dont go much over that or the 'cupcakes' will spill over. Bake for 30 minutes or until well browned on the top. Note: First, this is good for people who are less than thrilled with eggs. This is a modified quiche recipe that is much more custardy than eggy. Second, this is something I always make on Sunday night and then have a quicky breakfast for every day that week. Maybe I misunderstood. I didn't have the jumbo muffin tins so I made the recipe in 12 small tins. There was a lot of sausage in each tin. I sprinkled with cheese and then filled to the rim with egg mixture. I was worried about it overflowing like the recipe stated. However, my muffins actually shrunk! I haven't tasted them yet. I'm bound up to no end with cheese. My non low carbin' hubby liked em though! How come they didn't expand and get fluffy? What'd I do wrong?

LOL) I have made this recipe, but added a half cup of spaghetti sauce to make it pizza like. It's great! I have also made it in the muffin tins, but it's just as good in a pan sliced like pizza and the pan is easier to clean!

I also made them in 12 smaller cups, and mine rose... but then I bumped the pan and they all fell. They still taste wonderful though, and I'm looking forward to taking a couple to work for breakfast tomorrow. Thanks!

We put a tablespoon of sourcream on top, can't beat that.
