4 chicken breast halves -- cut into bite-sized pieces
1/4 cup Dry Sherry -- (2 oz.)
1 teaspoon Salt
1 teaspoon Pepper
2 teaspoons Garlic Powder -- (2 to 3)
1 tablespoon Bouquet Garni Seasoning
3 tablespoons Butter -- (3 to 4)
3 cups mushroom -- cleaned and quartered
6 ounces shredded swiss cheese
2 ounces Cream Cheese
1 pint Heavy Whipping Cream
How To Prepare:
Melt butter over med-hi heat. Add chicken, bouquet garni, sherry, garlic powder, pepper and salt. Saute until no longer pink. Add mushrooms and saute for another three minutes. Remove chicken mixture from pan and return all juices to pan. Add whipping cream, swiss cheese and cream cheese. Over medium heat stir frequently with wisk until the cheese no longer gums up in bottom of pan. Add the chicken mixture back into pan and continue to heat until almost boiling. Can be served over a bed of lightly sauteed zucchini shreds or as a soup.
