4 each skinless boneless chicken breast
4 ounces canned mushroom slices -- drained
1 cup TVP
1 Cup chicken broth
2 tablespoons diced onion
1 stalk diced celery
1/2 teaspoon salt and pepper -- each
1/2 teaspoon salt and pepper -- each/additional
How To Prepare:
Preheat oven to 350f. Spray a 9x9 cake pan with cooking spray.
Bring broth to a simmer and stir in TVP(crumbles type -unflavored), additional salt and pepper, celery, union and mushrooms. Pour into prepared pan and place chicken breasts on top -sprinkle with salt and pepper.
Cover with foil and bake approx 30 minutes or until chicken is cooked through. Top with shredded or sliced cheese (if desired -add carbs) and let melt, uncovered. Fluff TVP with a fork before serving. TVP is not rice -but it does work well (added protein and soy, too) in many recipes that call for rice. Try it in stuffed peppers! (be sure and add some extra liquid -it does soak it up).
