Description:
Ingredients: 1 pkg. boneless chicken breast(cut into bite size pieces)
1 cut sliced mushrooms
1 onion (I like vidalia onions)
1 pkg. frozen chopped spinach (thawed and water squeezed out)

8 ounces shredded mozzarella cheese (I use Italian 6 cheese mix)
grated parmesean or romano
garlic powder
salt & pepper, to taste
Italian seasoning (optional)
How To Prepare: Sautee and season with garlic powder, salt & pepper, chicken & chopped onion in olive oil, until cooked, but not browned. When almost done add mushrooms. Continue sauteeing until mushrooms are tender. Put in 9" x 9" casserole. Cover with spinach, then cover that with mozzarella, sprinkle with grated parmesan. Broil until top is golden brown.

This dish is absolutely delicious! I first ate this at a restaurant in Ybor City, Fl., have been recreating it at home ever since. Don't know the nutritional stats on it but all ingredients are low carb. Serves 4(or 3 very hungry dieters,LOL).
Number of Servings: 4
Carbs per serving - include all nutritional information if known: no counts provided
Effort (Easy, Average, Difficult): Easy
