8 Boneless, skinless chicken breasts
1/2 C. Atkins Baking Mix
salt & pepper
1/2 stick butter
1 C shredded cheddar
1 pint heavy cream
1 small can sliced mushrooms
How To Prepare:
Add 1/4" oil of choice and 1/2 stick butter to large baking pan.Put pan in oven while oven preheats to 425 degrees. Put baking mix, garlic powder, salt and pepper to taste in bowl or gallon freezer bag. Add breasts and coat well, shaking off excess. Take baking pan from oven and add chicken breasts to pan. Bake at 425 for 25 minutes. Turn chicken breasts and cook for 15 minutes longer. While chicken is baking, mix 1 pint heavy cream, 1 C shredded cheddar, mushrooms and salt and pepper to taste. When chicken is done baking, remove from oven and pour off all oil. Add the cream mixture on top of the chicken. At this point, you can sprinkle with some chopped onions and garlic powder if you like. Lower oven temp to 350 degrees and return chicken uncovered until cheese melts and mixture is bubbly. Serve and enjoy!!!
