In a sauce pan heat the 2 T of olive oil and saute the garlic, shallot and jalepeno until soft. Then add in the tomatoes, tomato sauce and all the spices. Cover and simmer for 20 minutes.
Meanwhile heat the olive oil for frying ( I use about 3 T) Season the breasts with salt and pepper, fry the breasts for about 3-4 minutes per
side. Place mozzerella on top of each and cover till melted. Divide the sauce evenly over each and sprinkle with parmesan.
