2 lbs lean ground beef
3/4 block cream cheese (room temperature)
1 medium head cauliflower
5 slices bacon (optional)
1 medium onion, chopped
1 T Worcestershire sauce
Spices to taste (basil, parsley, oregano, garlic powder)
2 cups Mexican blend or shredded cheddar cheese
Salt & pepper
How To Prepare:
Preheat oven to 350 degrees. Cook cauliflower & mash. Cook bacon, crumble, and set aside. Add ground beef, Worchestershire sauce, and onion to large skillet cook about 15 minutes or until ground beef is done. Drain off fat. Add crumbled bacon and spices, cool. Add cream cheese to mashed cauliflower, cool. Add eggs and 1 cup cheese to cauliflower mixture, mix well. Add cauliflower mixture to ground beef. Spread into casserole dish which has been sprayed with Pam.
Bake at 350 for 30 minutes. Remove casserole from oven and top with remaining cheese. Return dish to oven to melt.
Serve casserole with sour cream.
