1/2 pound hot Italian sausage
1 large onion
3 large eggs
1 cup heavy cream
1 cup shredded Swiss cheese
2 tablespoons butter
3 tablespoons olive oil
For the "crust" 3 tablespoons butter
1/2 cup shredded Pecorino Romano cheese
How To Prepare:
Pre-heat oven to 375. Melt the butter in a 9-inch casserole dish in the oven. When melted, add Romano and bake til golden brown. Allow to cool slightly.
Saute the onion in butter and olive oil til golden brown. In a separate pan saute the sausage til done. Blend the eggs, cream. Layer the casserole dish starting with the onion, sausage, and Swiss cheese before adding the egg/cream mixture. Bake uncovered for 30 to 35 minutes, or until puffed and browned.
