Ingredients: 1 tablespoon cider vinegar
1 teaspoon thyme
1 clove garlic
1/2 teaspoon oregano
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
black pepper to taste
olive oil
4 chicken breasts, no skin, no bone, R-T-C
10 ounce package of fresh spinach torn into pieces
1/2 pound of fresh mushrooms sliced
1 clove garlic
1 green onion sliced
olive oil
How To Prepare: Combine first 8 ingredients and rub all over the chicken. Grill or broil chicken breasts until done.

Heat a little olive oil in a non stick pan, add the garlic, mushrooms and onion and saute until tender (2 - 3 minutes). Add the spinach and cook, stirring until warm and wilted. Serve chicken on top of the spinach.
