Rinse chicken and pat dry with paper towels. Put chicken between two sheets of plastic wrap and lightly flatten the chicken with a meat mallet.
In small, non-metallic bowl, whisk together marinade ingredients. Put marinade and chicken in airtight plastic bag and turn bag to coat. Seal and refrigerate for 30 minutes to 8 hours, turning bag occasionally.
Grill chicken on GF or outdoor grill until cooked through.
The chicken can also be cut into strips and threaded on skewers - be sure to soak the wooden skewers in water for at least 10 minutes before using.
