Ingredients: 1 pound skinless boneless chicken breasts
2 tablespoons fresh lime juice
1 tablespoon Soy sauce
1 tablespoon peanut butter
1 tablespoon rice vinegar
2 garlic cloves -- minced
1/2 teaspoon sesame oil
1/2 teaspoon ground cumin
1/4 teaspoon pepper
How To Prepare: Rinse chicken and pat dry with paper towels. Put chicken between two sheets of plastic wrap and lightly flatten the chicken with a meat mallet.

In small, non-metallic bowl, whisk together marinade ingredients. Put marinade and chicken in airtight plastic bag and turn bag to coat. Seal and refrigerate for 30 minutes to 8 hours, turning bag occasionally.

Grill chicken on GF or outdoor grill until cooked through.

The chicken can also be cut into strips and threaded on skewers - be sure to soak the wooden skewers in water for at least 10 minutes before using.

Positive aspects of the product (pros): Delicious

At first glance it looks like this recipe contains 11g per serving. After looking closer I see that there are no number of servings listed and therefore the 11g is for the whole thing. Mastercook puts it at 2g per 4oz serving so I think that the 11g is still a bit high. I made 4# of chicken and only doubled the marinade therefore cutting the carbs down to 1g per 4oz serving. It was still plenty of marindade. I also used low carb peanut butter but I don't think that really changed the carb count for the large batch that I made. This is really delicious, moist chicken, definately a recipe you will want to try.
