Description:
Ingredients: 1 pound skinless boneless chicken breasts
Marinade:
2 tablespoons fresh lime juice
1 tablespoon Soy sauce
1 tablespoon peanut butter
1 tablespoon rice vinegar
2 garlic cloves -- minced
1/2 teaspoon sesame oil
1/2 teaspoon ground cumin
1/4 teaspoon pepper
How To Prepare: Rinse chicken and pat dry with paper towels. Put chicken between two sheets of plastic wrap and lightly flatten the chicken with a meat mallet.


In small, non-metallic bowl, whisk together marinade ingredients. Put marinade and chicken in airtight plastic bag and turn bag to coat. Seal and refrigerate for 30 minutes to 8 hours, turning bag occasionally.


Grill chicken on GF or outdoor grill until cooked through.


The chicken can also be cut into strips and threaded on skewers - be sure to soak the wooden skewers in water for at least 10 minutes before using.
